Are you a chocolate lover? THen this recipe is a keeper!
Both me and my 5 year old are big fans of Milano Centre filled cookies as well as Dark Fantasy centre filled, oh well both are the same thing!
So I had been searching for a perfect recipe to replicate the same.
These are almost the same, but only better, since we use butter and not margarine. Margarine might give you the crunk, and butter might make it more like a shortbread, but hey we all love shortbreads dont we?
Heres the Recipe
Adapted from http://www.vijisvirunthu.com/2013/09/choco-fill-choco-cookies.html
Ingredients:
We are baking at 160 Deg C, and not 180
1 1/4 cup flour
2.5 tbsp cocoa ( dutch process is preferable for the color)
3/4 C icing sugar
1 tsp vanilla extract
1 egg
120 unsalted grams butter
1/2 tsp salt
a handful of choc chips – optional
high choc ratio ganache ( refrigerated to truffle consistency)
Method:
In a standmixer with the paddle attachment
Beat butter and sugar until well combined. Takes a couple of minutes
Add the egg, and vanilla extract
Chuck in the remaining dry ingredients.
Take your dough, put in cling wrap and refrigerate for 15-20 mins. Basically cold enough for you to handle.
In the meantime, make small balls of ganache
Now divide your cookie dough into equal parts for your cookies, fill each with ganache balls, roll it all up. Essentially the ganache needs to be FULLY covered with your cookie dough
Gently press them down a tiny bit. Sprinkle the chocolate chips
Bake in a preheated oven at 160 Deg C, for 25 mins, lower baking will prevent cracked tops . Let them cool down completely before devouring. I couldnt wait, gobbled 2 down straight up!
Nom Nom Nom…..You could also get a whipper from Cream Charger Warehouse to make and add some yummy whipped cream on top and it would just make the cookies taste so much better.
*Ganache would be in ratio 2:1 (chocolate:cream) and chilled completely so as to be able to form balls
* Egg Substitute – 2 Tbsp of water + 1 Tbsp of oil + 2 Tsp of Baking Powder , Mix up all of these , until frothy and use in place of 1 egg.
